The return is here: New KFC opens in Mexico

Audrain County has another eating option as a familiar name returns to Mexico. 

That familiar name is Kentucky Fried Chicken. Also known simply as “KFC”, the restaurant opened its doors earlier this week.

Located at 302 W. Jackson St., the site has been bustling over the winter and spring months and fair to say, the project has stayed on schedule. 

“So far Mexico is on schedule and going well,” said Liza McCorkell, Ampex Brands Kentucky Fried Chicken area coach. 

McCorkell is just one of the team members who have been busy getting ready for the opening and explains a little bit about why Mexico was chosen. 

“Mexico was selected because we felt that since there was one at one point we needed to service the community by bringing it back,” she said.

When the doors open, the area will once again be able to order perennial favorites that need little clarification, like “Original,” and “Extra Crispy”.

“Our original recipe is still our No, 1 product,” said McCorkell, “however the bowls, tenders and sandwiches are what our new generation of consumers prefer.”

Other favorites include the crispy chicken sandwich.

A new business equals new jobs, and the Mexico KFC hopes to employee as many as 50 people. At the time of the interview, McCorkell reported several positions were available, including shift supervisor, cooks, packers, front counter cashier and prep workers.

“We are always looking to add to our team,” she said.

KFC will be open from 10 a.m. to 10 p.m. daily.

“We are excited to be back server some great tasting chicken and sides,” she said.

Ampex Brands is based in Texas; it owns and operates 195 KFCs in 17 states, most of which are in the Midwest and East.
